Bulk Beef Quarters
-
Animal shares are sold in quarters (1/4, 1/2, 3/4 and whole). The price is based on the carcass (hanging weight) on a $ per lb basis. To reserve your portion we ask for a $200 deposit per quarter requested. The final price will be invoiced when the meat is picked up from the butcher. It will account for the deposit, taxes, and any special requests made to butcher. The balance is due upon pickup.

Each animal is different but generally, you should expect 60 - 90 lbs of packaged meat per quarter. This will take up 4 cubic feet of freezer space, and can generally feed a family of four for 4 months.
In addition, the offal (heart, tongue, kidneys, liver) is also available.

When you order a share, we provide you with the butcher’s cut sheet. You can specify and request specific packaging options.
We can guarantee that we pass along your instructions, unfortunately, we cannot guarantee that no errors are made at the butcher. We will do our very best to ensure that you receive the cuts you request.

If you are new to buying bulk beef, you might be wondering how a "split quarter" works.
Normally, a steer has a front quarter (which has lots of roasts, chuck, and ribeyes) and a hind quarter (which has the tenderloin, strip steaks, and sirloins). If we sold straight front or hind quarters, one customer would get all the steaks, and the other would get mostly roasts!
To make things completely fair, we sell Split Quarters (sometimes called "mixed quarters"). This means we take a full half of the beef and split the final packages 50/50 down the middle. Both buyers get an equal share of every single cut from the front and back of the animal.
